Oatmeal Drop Scones Makes 10

Ingredients
1 cup old fashioned oats1 1/4 cup whole wheat pastry flour (not regular whole wheat flour)1/2 tsp baking powder2 tsp. splenda1/2 tsp. baking soda1/2 tsp. lite salt1 1/4 cup lite soy milk1 tbls. vinegar
Directions
Preheat oven to 400oF. Mix dry ingredients. Mix soy milk and vinegar in small bowl. Mix both dry and wet ingredients together. Drop 10 mounds onto a non stick baking sheet or a baking sheet lined with parchment paper, sprinkle with a touch more splenda on top. Bake for about 15 minutes.

Remove from oven and serve warm. I split down top while still warm with a fork and added some low calorie jam.
