Smashed Pea & Barley by the CPK Book

Ingredients
1 lb split peas-sort and wash1/2 cup pearl barley2 Qt water2 bay leaves1 teaspoon salt1 Tablespoon soy sauce1 Tablespoon chopped fresh thyme OR 1/2 Tablespoon dried2 teaspoons minced garlic1/2 teaspoon rubbed dried sageLarge pinch ground cumin1 1/2 cups diced carrots2/3 cup minced onion1/2 cup finely diced celery1/4 cup thinly sliced scallion greens
Directions
In a large or saucepan combine peas, barley, water, bay leaves, salt, soysauce, garlic, thyme, sage adn cumin. Bring to a boil over high heat. Reduce to bare simmer, cover, cook for 1 hour, stirring occasionally.

Stir in carrots, onion and celery. Cover and simmer until vegs are tender 20-30 minutes. Move. Discard bay leaves. Ladle into warm soup bowls, garnish with scallion.

6-8 servings.
