Spinach and ham omelette topping

Ingredients
4 medium mushrooms, sliced50g baby spinach (a big handful)1 scallion/spring onion, chopped finely100g extra lean ham, chopped finely1/2 large red pepper/capsicum, chopped finely75g feta, crumbledolive oil spray for cooking
Directions
Lightly spray non-stick frying pan with olive oil. Add mushrooms, and after a minute or two, the spinach to wilt and the red pepper. Transfer to bowl. Follow instructions for "3-egg omelette" (https://recipes.sparkpeople.com/recipe-detail.asp?recipe=1191753), adding the ham first, then the cooked mix and spring onions, and finally topping with feta.
