The BEST Swiss Chard Soup

Ingredients
1 medium carrot coarsely chopped1 small zucchini coarsely chopped1 small yellow squash coarsely chopped1 small red onion2 tbsp olive oil2 garlic cloves3 cans chicken broth4 cups Swiss chard1 can great northern beans (15.5 oz) rinsed and drained1 can diced tomatoes untrained 1 tsp dried thyme½ tsp dried oregano ¼ tsp pepper¼ cup parmesan cheese
Directions
In Dutch oven or soup kettle, sauté carrot, zucchini, yellow squash, and onion in oil until tender. Add garlic and sauté 1 minute longer. Add broth, Swiss chard, beans, tomatoes, thyme, salt, oregano, and pepper.

Bring to boil, reduce heat, simmer, uncovered for 15 minutes or until chard is tender. Just before serving, sprinkle with parmesan cheese.

Tip: I prefer to use fire roasted tomatoes for an added kick of flavor. Depending on your tastes - add garlic as needed.

    Are you kidding?? Impossible to follow! You don't even say how the chard supposed to be prepared? You say to add ALL of the ingredients, but they're not ALL listed. How small is a small, medium or large? You have no measures for anything! Go away!! - 7/17/13

    I made this to use some of my vegetable harvest and varied the vegetables according to my garden's yield. I subbed some carnival squash for the zucchini, used fresh tomatoes and LOTS of extra chard. I sauteed the chard stems with garlic and onion to - 10/28/12
