3 whole eggs5 egg whites2 cups shredded zucchini, excess water squeezed out1 cup 2% cottage cheese, liquid drained off
Mix all ingredients and pour into 12 cup muffin pan sprayed with cooking spray. Bake at 350 degrees for 30 minutes, or until set.
