1 pound frozen black eyed peas (or 1 pound dried & soaked peas)14 oz - 1 pound smoked turkey sausage (sliced or cut into bite size pieces)1 cup chopped onion1 jalapeno (diced & no seeds)1 can tomatoes with green chilies (Rotel)1 teaspoon Cajun Seasoning1/2 teaspoon ground thyme1/2 teaspoon ground cumin3-4 cups chicken broth
Heat a 5 quart saucepan over medium high heat. Add sausage and brown for a few minutes. Add onion and garlic and saute until tender. Add 3 cups chicken broth, tomatoes, seasonings, jalapeno and black eyed peas. Make sure the mixture is covered with broth. If not, add more. Bring to a boil. Cover the pot losely (with lid tilted) and lower the heat to medium low. Simmer for 1 1/2 hours stirring occasionally. Save any remaining broth to add later if needed.
Serve over brown rice if desired
*Cajun Seasoning:
3 tablespoons paprika
4 teaspoons dried oregano
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon ground red pepper
Combine all the ingredients in an empty spice jar or a small resealable container. Use wherever Cajun seasoning is called for, on fish, chicken, pork or rice. One of the benefits of this seasoning is that it's much lower in sodium than commercially available products. Makes about 1/3-cup.
