Ingredients

    4 (4-ounce) boneless pork chops, 3/4-inch thick

    2 teaspoons curry powder

    1/4 teaspoon seasoned salt

    2 teaspoons vegetable oil

    4 sliced green onions

    1/4 cup raisins

    1/3 cup chicken broth

    1 teaspoon cornstarch

    1 fresh mango, peeled and diced

    2 tablespoons flaked coconut


Tips

Serve with hot cooked rice or warm corn tortillas.


Directions

Season chops with curry powder and seasoned salt. Heat oil in large skillet over medium-high heat. Brown chops on both sides, turning once, for a total of 7-8 minutes. Remove chops from pan, reserve. In small bowl stir cornstarch well into chicken broth. Add onions, raisins, and chicken broth mixture into skillet; cook and stir until slightly thickened. Return chops to pan; heat through. Serve chops garnished with mango and coconut.

Makes 4 servings (3 oz cooked pork per serving.)

    This was really easy and very tasty. I doubled the broth/cornstarch and heated the mango in the sauce. I will probably double the curry next time. Very flavorful! - 1/27/08

    My husband told me I HAVE to make this again. I did add some red pepper flakes to give more heat, which was wonderful. Next time I'll double the broth/cornstarch too. - 9/10/07

    Fantastic! I added 1 tsp each of minced garlic and ginger with the broth and raisins, and also added the mango and coconut in with the sauce and chops and heated through. Wow! Wonderful over basmati rice with some plain yogurt or sour cream on the side. - 11/14/07

    They had so much flavor(added a bit more curry than called for) Also it was so easy and quick to make. Hubby loved them so did I . Will definitely make them again. I will add more broth and cornstarch though. - 9/12/08
