p-76222985910.html), but didn't have a few of the ingredients on hand. I made some substitutions and was very happy with the results. The spices used in this soup really bring it to life!

I threw this soup together using all the veggies in my fridge -- obviously you can use vegetable broth instead of beef to keep it vegetarian, I just didn't have enough on hand!

I sliced the carrots super thin so everything would cook quickly. At mealtime I scoop out a bowl and add a hard boiled egg to it, but you could also heat a serving in a pan and drop a raw egg in for more of an egg drop soup style. Not low in sodium but mighty tasty. Good with red pepper flakes in, too!
