Italian Meat LESS Balls (from residual juicing pulp solids)
These are the BEST meat LESS balls I have ever tasted. Can hardly wait for them to bake, they are that good!
Was searching for a good way to utilize the leftover solid pulp from morning juicing, and this is my most favorite recipe as these make a great main dish or snack. They freeze well, and are great tossed into a veggie stir fry, a pasta dish, a big pot of soup - or just plain in a take-along lunch. Try them plain, hot or cold, with a dipping sauce (tomato, fat-free sour cream, whatever), make them big and slice for a sandwich, you name it, I am still discovering great ways to enjoy these.
Used a reliable online nutrition calculator to compute the nutritional facts for both the liquids and solids (pulp) of juicing and am satisfied with the numbers. When drinking a big juice in the morning and enjoying these meat LESS balls for lunch and dinner, I see the number on the scales go down - so I am convinced these numbers are relatively accurate.
What a great way to see all that pulp that is left in the juicing machine after making that morning juice!
