Ingredients

    1 kg (35 oz) Lean ground Turkey
    1.2 cups of shredded carrot
    1.5 cups of shredded zucchini
    1 stalk of finely chopped celery
    1 finely chopped hot pepper
    1 cup of bread crumbs
    2 tbsp of tomato paste
    2 eggs

Directions

1. Preheat Oven to 375˙F. Shred zucchini and carrots into a large bowl. Add chopped hot pepper and celery. Mix lightly.

2. Add turkey, tomato paste, bread crumbs and eggs. Mix lightly again. *don't over mix

3. Line baking sheets with parchment paper (optional) and space balls evenly about 1/2" apart. Bake for 35minutes minimum. If you like them a little more browned add more time as needed.

Serving Size: makes 52 average sized balls
