Ingredients

6 Large eggs
2 cups Walnuts
2 cups bread crumbs
3 or 4 cup shredded Mozarella
2 tbsp Basil
zest of 1 lemon
juice of 1 lemon
1 tsp Oregano, ground
1 dash Salt
Tips
Once baked these freeze well.
Directions
Preheat oven to 350 degrees. Cover two baking sheets with parchment paper.
Grind the walnuts in a food processor. Combine all ingredients in a large bowl and mix.
Using tablespoons or ice cream scoops, scoop out the mixture and place each ball, one inch apart, on the baking sheet. Bake for 20-24 minutes, flipping meatballs over halfway through.
Serve over pasta with sauce, or perhaps in a hot sub sandwich.
Serving Size: 1 medium sized ball or 2 small balls
