Introduction

Ingredients

    All ingredients are approximations, because Italians don't measure :)

    1 Medium Eggplant skinned and diced (about 4 cups)
    1 c. bread crumbs (I make my own using Italian bread once it has gone stale- add a little flax seed and seasonings and wahla- healthy!
    1/5 c. grated parm (if vegan omit, just add salt)
    2 carrots pealed and chopped small (in food processor)
    Tofu crumbled (1/2 inch thick of a slice)
    1 small onion diced
    3 cloves garlic crushed
    Parsley and oregano
    Salt and crushed pepper to taste

Directions

Preheat oven 350 degrees.

Prepare eggplant, chop onion, garlic, carrots, etc.

Heat oil in skillet, add garlic onion and eggplant. Saute for about 20 minutes.

In a large bowl mix bread crumbs, tofu, cheese, seasonings if using dry rub with hands to release flavor, and carrot. Add eggplant, onion, garlic mixture. Mix well. Create small balls, place on cookie sheet (spray with cookinh spray) and bake for about 30 minutes. Turning balls every 10 minutes or so.

Serve with marinara sauce (I of course use homemade) and over pasta! Yum yum!

Makes about 26 small meatballs (about the size of 1/2 dollars.
