Ingredients

    1 Bunch of Kale
    4 Shallots
    1 Stalk of Celery, with leaves
    1 tbsp Cumin Seeds
    1 cup Okra sliced
    3 cloves Garlic
    1 Tbsp Salt
    1 4 oz Beef Bottom round or other stewing cut, cubed
    1 cup frozen peas
    1 cup chopped carrots
    6 cups Swanson Chicken Broth, 99% fat free and low sodium


Directions

Begin by dicing all of your vegetables and the beef into cube sized pieces.
Bring the Chicken Broth to a boil in a large pot.
Add all of the ingrediants and simmer on low for an hour and a half. Enjoy!

I usually make this delicious soup at night and eat it the next day for lunch and dinner.

I use an organic Swanson Chicken Broth that has low sodium and is 99% fat free. I can't find it in the recipe calculator so this shows a really high sodium content. In reality, the soup isn't so bad on sodium. If you're on a low sodium diet, substitute the broth for any other kind that you like!
