Ingredients

    8 cups beef broth
    1 large head kale, chopped
    1 can black beans
    1 can great northern beans
    1 can cannellini beans
    5 stalk celery, diced
    4 medium carrots, diced
    1 medium onion, diced
    1 medium red bell pepper, diced
    1 medium tomato thickly diced
    1 tbsp rice vinegar
    3 sprig thyme
    3 bay leaf
    Salt & Pepper to taste
    Vegetable Oil Cooking Spray

Tips

Recommend serving over 1/2 cup cooked quinoa.


Directions

In a large stock pot, lightly spray and heat vegetable oil and saute diced carrot, onion, celery, and green peppers until onions are translucent. add tomatoes, kale, and vinegar and simmer an additional 2-3 minutes. Add beans, thyme leaves (removed from stems), bay leaves, and seasonings and simmer an additional 2-3 minutes. Add beef broth and bring to a boil over high heat. Once soup is boiling, reduce to a simmer (low heat), cover, and cook 1 hour. Remove bay leaves before serving.

Serving Size: Makes about 10 1.5 cup servings
