Low Fat Zucchini Bread

3 cups plain flour1 teap. Salt1 tesp. baking powder1 teap. baking soda3 tesp. cinnamon (pumpkin pie spice is also good)4 egg whites1 cup unsweetened apple sauce2 1/4 cups sugar3 tesp. vanilla extract2 cups grated zucchini
1.Grease and flour two 8 X 4 loaf pans. Preheat oven to 325 degrees F.
2. Sift Flour, salt, baking powder, soda and cinnamon together in a bowl, Set aside.
3. Beat egg whites, apple sauce, vanilla, and sugar in a large bowl. Add sifted ingredients to creamed mixture and beat well. Stir in grated zucchini until combined. Pour batter in to loaf pans.
4. Bake for 40-60 minutes or until tester comes out clean in center of loaves. Cool in pan on rack for 20 minutes. Remove and let cook completely.
