1 can (15.5 oz) pinto beans, rinsed and drained1 c. no-sugar added prepared salsa4 large eggs3 large egg whites (6 tablespoons)1/2 t. cumin1/4 t. black pepper1 avocado
Combine beans and salsa, warm. Wisk together the remaining ingredients (except the avocado) and cook in fry pan until the consistency of scrambled eggs. Mix the bean mixture with the eggs. Divide among 4 bowls and top with 1/4 of the sliced avocado.
