1 box (14.5 oz) penne rigate (Ronzoni Smart Taste)1/2 cup frozen peas1 1/2 tsp olive olive1/3 cup chopped shallots1/4 cup vodka2 cups marinara sauce4 oz fat-free cream cheese, broken into chunks
1. Cook pasta in large pot of salted boiling water as box directs. Add peas just before draining pasta.
2. Meanwhile, heat olive oil in a medium saucepan. Add shallots; cover and cook over medium heat 3 minutes.
3. Add vodka; boil until evaporated, about 2 minutes. Stir in marinara sauce; simmer 2 minutes to blend flavors.
4. Stir in cream cheese and cook, stirring until melted.
5. Drain pasta and peas. Return to pot; add sauce and gently toss to combine.
