DRESSING:.5 cup chopped cilantro2 green onions chopped3 Tbs lime juice1 small serrano pepper(seeded) chopped1 tsp honey.5 tsp grated lime peel.5 tsp salt.25 tsp ground pepper2 tbs olive oil.SALAD:1 (15oz) can garbanzos drained and rinsed1 (15oz) can black beans drained and rinsed2 cups coarsly chopped tomato1 med.cucumber peeled,seeded and chopped.5 cup red onion chopped.5 cup cilantro chopped.1 green onion sliced.
serves8 (scant cup each)
mix all ingredients for dressing exept oil in blender for one min.with motor running add the oil blend until smooth.
Combine all ingredients for the salad in large bowl.
Add the derssing ,mix well. cover and refridgerate at least 30 min.
