Corn Salsa

Ingredients
1 slice bacon finely chopped1 ear sweet (remove corn from cob)1/2 chopped red bell pepper1/4 chopped medium yellow onion1/4 diced red tomato1/4 c. sliced white mushrooms1 Tbs olive oilsalt and pepper to taste
Directions
using medium skillet on medium heat, heat the olive oil, add all the ingredients. Stir occassionally. Cook until pan starts to carmelize. Add 1/4 water, stir to combine glazing with ingredients, cover. Reduce to glaze, stirring occasionally until corn is done. May need to uncover during final stages. Can eat hot, but tastes best cold. Serve on crackers or as a salad toping. Very flavorful.
