Dennis' Cucumber Salad

Ingredients
* Red Onion, raw, 1/4 cup, chopped * Red Ripe Tomatoes, 1 cup, chopped * Cucumber (peeled), 1/2 cup, sliced * Raspberry Vinaigrette Dressing, 1/4 cup
Directions
Makes four 1/2 cup servings.

Chop the onions, dice the tomatoes, and peel then chop the cucumbers. Toss them together in a bowl, and add the dressing over the top. Stir the ingredients together so veggies are coated in the dressing. Serve.

    Leave out the vinagrette dressing and most of the calories. Use apple cider vinegar, salt and pepper, and a couple of ice cubes to keep the cucumbers crunchy. - 9/20/10
