Ingredients
Pistachio cake 1 white cake mix3 egg. whites ( room temp.)1 box pistachio pudding mix1 cup oil1/2 cup chopped nuts (optional)1 cup water Topping: 1 box pistachio pudding mix1 1/2 cup milk9 oz. pkg. coolwhip
Directions
9 X 13 pan 350 degrees 40-45 minutes

Cake: Mix cake mix, egg whites, water, and pudding mix with oil for 4 minutes. Fold in nuts. Then bake and let cool before adding topping.

Topping: Beat pudding and milk 4 minutes. Fold in coolwhip. Put on cooled cake and refrigerate.

    I made this for Christmas. Everyone like it. Reduced calories further substitutions I made. Cake part: powdered egg whites, S/F pistachio instant pudding. Frosting: S/F pistachio instant pudding , milk-skimmed, cool whip-lite. Both cake mixture & frosting added 1/2 tsp. pistachio flavoring. - 12/30/07

    I made cupcakes and they turned out great - very good! Only thing was, the bottom of the paper cups became greasy. I, too, would be interested in finding out how to replace the oil with applesauce. - 8/27/07

    You can take a regular box cake mix and add a can of pumpkin to it. It tastes great and you get fiber from the pumpkin. - 8/27/07

    this was sooo good. It pleased everyone and was so easy to make. I just made the 13 by 9 instead of two 9 inch. but next time i will double the recipe and stack the cakes with the topping in the middle. - 8/13/07

    I actually haven't made this yet, but am looking forward to it. I will probably replace oil with flaxseed to increase my omega-3 and fiber intake. Read label of flaxseed package, should tell you how much to use to replace oil. - 8/10/07
