Raspberry Cream Cheese Tarts

Ingredients
3-4 wraps or tortillas (calorie count based on Aldi's Fit&Active Original Wraps)1 package low fat cream cheese2-3 tbsp low-fat or skim milk1/2 tsp almond extract3 tsp granulated sugar2 tbsp brown sugar1/2 tsp cinnamon1/4 tsp nutmeg1 cup raspberries (approx 30)cooking spray
Directions
Get out muffin tin and cooking spray.
Cut circles out of the wraps. Tuck cut-outs into muffin tins. (These will be your tart shells.) Spray with cooking spray.

Mix the brown sugar, cinnamon, and nutmeg. Sprinkle over the cutous in the muffin tin.

While shells are baking, mix cream cheese, granulated sugar, milk, almond extract together until creamy.

Let shells cool on rack.

Add a dollop of cream cheese mixture to each shell.

Top with raspberries.

Makes 16 servings.

Put in oven at 350 for 12-15 minutes. Aim for shells to be crunchy! One issue with the fit and active wraps is that they tend to be a little chewy. A regular flour tortilla might do better.

    I just made these for a girlfriends night out at the local amphitheater...I think they will be a hit! I did use regular Mission brand lowfat tortillas, I also mixed a few crushed raspberries into the cream cheese. They are light and TASTY!!! My 12 year old even thought they were delicious. - 8/28/11
