Black Eyed Pea Maque Choux

1 cup chopped onion2 tablespoons chopped garlic2 tablespoons coconut oil1/2 cup chopped red bell pepper1/2 cup chopped green bell pepper2 cups frozen corn kernels, thawed2 cups frozen black eyed peas, thawed1 cup chopped, seeded tomatoessalt & pepper to taste3 beef bouillon cubes1/2 cup to 1 cup water (depending on the consistency you want)
Saute the onion and garlic in the oil in a saucepan until the onion is tender. Stir in the bell peppers, water, bouillon, corn and peas. Cook for three minutes, stirring frequently. Add the tomato, salt & pepper and mix well. Cook for one minute longer or until heated through, stirring frequently.
If your frozen peas are NOT the pre-cooked type, you'll have to cook for 40 minutes instead of 3 minutes.
