Oatmeal Chocolate Chip Cookies

1 1/2 cups all-purpose flour1 tsp baking soda1 tsp cinnamon1/2 tsp salt1/2 cup (1 stick) margarine, softened1 cup firmly packed brown sugar1/2 cup unsweetened applesauce2 eggs1 tsp vanilla3 cups oats (quick or old fashioned, uncooked)1 cup dark chocolate chips
Heat Oven to 350F
Combine flour, baking soda, cinnamon and salt.
In separate bowl, cream together margarine and sugar.
Add applesauce, eggs and vanilla; beat well.
Add flour mixture and mix well.
Stir in oats and chocolate chips.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 10 to 12 minutes or until golden brown.
Cool 1 minute on cookie sheet then remove to cooling rack.
Makes 3 dozen.

These cookies truly are delicious! I used strawberry apple sauce and it gave them a sweet flavor and a light texture. They are not greasy at all, and they don't even taste "healthy". Definitely a new Fav. Just be careful not to overcook and you'll have a soft yummy cookie in minutes. - 6/18/09
