Ingredients
Vinaigrette:1 T. balsamic Vinegar3 T. Extra Virgin Olive Oil1/2 packet NOW Stevia1/4 t. salt1/4 t. cracked black pepperSalad:1 small (or 1/2 medium) jicama, peeled1 medium tart (e.g. Granny Smith) apple, cored1/2 c. blueberries, frozen or fresh
Directions
Prepare vinaigrette: combine vinegar, olive oil, stevia, salt and pepper. whisk until combined.

Prepare salad:
Julienne jicama
Julienne apple
add blueberries

Combine salad and vinaigrette and refrigerate until cold, about an hour.
