Cucumber Tomato Salad

Ingredients
2 medium cucumbers, peeled and roughly chopped1 small sweet onion (like vidalia), finely chopped1 medium ripe tomato, seeds removed and chopped1 red bell pepper, chopped3 tablespoons cider vinegarjuice of 1 lime1/4 teaspoon dried dill (or fresh if you have it!)salt and pepper to taste
Directions
Chop all vegetables and combine in a large bowl. In a separate bowl, mix juice, vinegar, and spices. Pour over vegetables and toss to coat. Chill or serve immediately.
Makes about 6 1-cup servings. Seconds are practically guilt free.
