Ingredients
#1 11/2 c carrots, shredded (2-3 medium size)1 c apples, shredded with peels on1/2 c coconut1/2 c raisins1/4 - 1/2 c chopped nuts of your choice (use for top of muffins)Note: can use dryed chopped fruits.#2mix together(1/4 c milk mix 1/4 c bran flakes let sit til bran flakes is moisted)add the below ingredients to the milk and bran flakes mix well2 eggs3/4 c veg oil (oil of your choice)1 TBSP vanilla ( flavoring of your choice adjust to your taste)#311/4 c unbleached white flour 1/4 c whole wheat flour 1/4 c soy flour1 c brown sugar packed2 tsp baking soda1 TBSP ground cinnamon 1/2 tsp saltblend the dry ingredients wellin the dry ingredients bowl -blend in the milk mixture- blend welladd the carrots mixture - blend well divide batter evenly in 18 muffin pans then sprinkle nuts on top

18 regular sized muffin

bake for 20-25 min, cool for 5 min. remove from pan
