zucchini chicken stew

Ingredients
Zucchini, 7 cup, sliced Mushrooms, fresh, 1 cup, pieces or slices Chicken Broth, 4 cup (8 fl oz) Chicken Breast, cooked and cubed*Dried Onion Flakes, 4 tbsp *5th Season Garlic Salt, 0.5 tsp Pepper, black, 1 tsp Uncle Ben's Instant Whole Grain Brown Rice, 1 cup Water, tap, 1 cup (8 fl oz) Tomato Paste, 0.5 cup
Directions
Cook zucchini and mushrooms in chicken broth until tender. Add everything else except the rice. Bring to a boil and lower heat to simmer for 5 minutes. Add rice and water, cover and bring back to a boil for 5 minutes. Stir, cover for an additional 5 minutes to allow rice to absorb water.

    This is a good "base" for chicken stew. I didn't have any tomato paste so I used 1/2 jar salsa. I also added chicken broth (organic), fresh carrots, onions,and broccoli and left out the mushrooms. It was yummy! - 8/16/10
