Confetti Salad

Ingredients
One Each Diced:Sweet Red PepperYellow PepperOrange PepperGreen PepperAvocado1 oz Goat Cheese Crumbles6 Tbsp Balsamic Vinegrette
Directions
Chop peppers into 1/2 inch pieces and mix with oil and vinegar. Just before serving, fold in avocado and goat cheese for bright color. NOTE: The avocado can be diced in advance as long as it's left with the whole pit in the bowl, to prevent discoloration. Makes 10 1/2 cup servings
