Fresh Salsa Chicken Salad

* 2 full Chicken Breast, boneless, skinless* homemade pico de gallo (see instructions)* 8 cups - shredded romaine lettuce* 1 large tomato* black olives* 4 tbsp - Sour Cream
Prepare a pico de gallo (salsa) recipe that suits your taste buds. My favorite is found at:

Once your homemade salsa is prepared, preheat oven to 375 degrees.
Dice the chicken into bite-sized pieces and cover with one serving of salsa in an oven-safe dish. Bake until juices run clear.
Shred romaine lettuce, dice the tomato, and slice black olives. Dish into four separate bowls. Add the prepared salsa chicken. Top with sour cream and some more of your homemade salsa.
Makes four delicious salsa chicken salads.
Variations:
* Add cheese, refried beans, whole pinto or black beans, and/or rice. (Track any additions!)
* Buy fresh corn tortillas, cut into sixths, and bake until you have fresh, not-fried chips to add!
