1 box Pad Thai rice noodles, cooked, drained and rinsed as instructed on box16oz Raw Shrimp4 shallots2 cloves garlic, minced4 Tbsp oil, divided2 eggs, beaten lightly2 Tbsp lime juice3 Tbsp Fish Sauce3 Tbsp sugarPinch, red pepper flakesOptional: Peanut pieces as garnish.
Heat non-stick skillet with 2tbsp oil. Saute shrimp, garlic and shallots until shrimp turns orange. Remove from skillet and set aside. Add remaining 2tbsp oil and scramble eggs. Add noodles and sauce, mixing well. Add back shrimp and shallots. Heat thoroughly and serve with sprinkling of peanuts as garnish.
Sauce: mix together lime juice, fish sauce, sugar and red pepper flakes.
