Slow Cooker Chipotle-Lime Chicken Thighs

5 skinless chicken thighs1 1/4 cup each onion, celery, and carrots cut upsalt and pepper1 (15 oz) can no salt added tomato sauce2-3 tbsp brown sugar1/4 cup lime juice1 minced chipotle pepper plus 1 tsp adobo sauce2 cloves garlic1 avocado diced (optional)1/4 cup fresh cilantro (optional)lime wedges for garnish (optional)
Each slow cooker is different. I place my meat on the bottom, then vegetables on top. In medium bowl, combine tomato sauce, brown sugar, lime juice, chipotle peppers with sauce, and garlic. Pour over chicken. Cover and cook for 6 to 8 hours on low or high for 3 to 4 hours. Serve topped with diced avocado and cilantro with lime wedges and steamed rice or beans and rice. Number of servings vary depending on number of chicken thighs. I used 6 thighs in this recipe. Avocado is not included in the calorie count.
