Basic Meatloaf

Ingredients
1 1/2 lbs ground beef, lean1/2 lb ground pork , lean1 egg1/2 cup seasoned bread crumbs1 can diced tomatoes & chilies, drainedreserve the liquid1/2 teaspoon grill mates seasoning1/2 cup chopped onions1/2 cup chopped green peppers2 cloves garlic, chopped8 tbs (or 1/2 cup) ketchup
Directions
Beat egg slightly. In a large bowl, mix together meats, the drained tomatoes & chilies, and everything else. Mix with hands if a spoon is not mixing well. Form into one loaf. Place in loaf pan that has been sprayed with fat free cooking spray. Mix reserved liquid from canned tomatoes with ketchup, spread over top of loaf. Bake at 350 for 30-45 minutes, until center is done, no longer any pink remaining. Allow to cool for a few minutes before slicing. Slice into 10 servings. Leftovers may be refridgerated and served as sandwiches the next day. If you do not have a loaf pan, meat can be formed into loaf shape and baked in a 9x13 pan.
