HEALTHY FROSTED GERMAN CHOCOLATE CAKE

Ingredients
1/2 cup unsweetened pure cocoa powder2 ounces Bakers bittersweet baking chocolate1/2 cup boiling water1-1/3 cups Splenda2 teaspoons pure Black Walnut extract4 large egg whites (save yolks for frosting)2 cups whole-wheat pastry flour1 cup unsweetened apple sauce2 teaspoons baking powder1/2 teaspoon baking soda1 cup low-fat buttermilk
Directions
Preheat oven to 350 degrees F. In a small container, add Bakers chocolate and cocoa powder. Pour in 1/2 cup boiling water. Stir with a rubber spatula until the chocolate melts and set aside. In a large mixing bowl, sift flour, Splenda, baking soda, baking powder and sea salt. Separate eggs and reserve yolks for frosting. Stir in egg whites, applesauce, buttermilk and extract.
Mix with rubber spatula until well-combined. Pour in chocolate mixture and stir with spatula until well-combined. Spray two 8-inch round cake pans
with cooking spray. Divide batter into two pans. Bake at 350 degrees F for 35 to 40 minutes or until a toothpick inserted into center comes out clean. Immediately turn onto a wire cake rack to cool completely. When cakes are cooled completely frost first cake with half the frosting, top with second cake and frost top. Allow to cool and slice.

    COCONUT PECAN FROSTING" by same person. So in actual 1 serving would really equal 511.4 total - which puts this right up with the rest of them; So much for "healthy"?? Rated HOW? - 11/21/10
