Tostada, GUERRERO Toasted Corn, 2 serving (remove)La Victoria Enchilada Sauce, 0.5 cup (remove)Almond Cheese, Cheddar Style, 7 oz (remove)*Olives, sliced, Black Pearls - Musco Family Olive Co., 50 gram(s) (remove)Spinach, fresh, 4 cup (remove)*Brown Rice, long grain, .7 cup (remove)Beans, black, 0.5 cup (remove)Beans, red kidney, 0.6 cup (remove)La Victoria Diced Green Chiles, .5 cup (remove)Onions, raw, .7 cup, chopped (remove)Jalapeno Peppers, 1 pepper (remove)
Precook, drain and cool vegetables.
Layer ingredients in a 9X9 baking dish, beginning with the beans, rice, then veggies. Otherwise the bottom will be soggy.
I divide cheese into two equal amounts, adding one layer in between the vegetables and cheese. Then the tortillas, a few more beans and top with cheese and olives.
Bake at 375, about 40 minutes.
Makes 6, approximately 1.5 cup servings.
