Extraordinary Mac And Cheese Lower carb

Ingredients
2c ww penne rigate6 T butter divided3T soy flour2c Whipping cream2.5 C shreadded cheddar.75 C Parmesan cheese2t season salt2T PankoReserve pasta water in case the sauce is too thick.
Directions
Cook pasta accordind to instructions

preheat over to 400

melt 4 T butter in a sauce pan over medium heat

stir in flour, stiring constantly for 3 minutes

wisk in cream and bring to a soft boil

reduce heat to medium low wisk for another 3 minutes

stir in 2 c of cheddar and half the parmesan, plus the season salt

add pasta water if it is too thick

remove from heat and add pasta, and transfer to baking dish

Make the topping:
melt remaining butter

stir in the panko and remaining cheese until well combined

sprinkle over pasta and bake for 20 minutes

remove when golden brown
