Marinated Zucchini from Gluten Free Living

Ingredients
Zucchini, 2 cup, sliced (remove)*Nakano Seasoned Rice Vinegar, 4 tbsp (remove)Granulated Sugar, 1 TBS (remove)*Kosher Salt, 0.5 tsp (remove)1 large scallion chopped find
Directions
Slice the zucchini very thin and chop the onion, set aside. Measure vinegar, sugar and salt into a small sauce pan. Bring to lukewarm temp until all sugar and salt dissolve. Pour over zucchini and onion mixture. Cover a chill for at least 1 hour before serving.
