Fantastic Low Sodium Curry Chicken

Ingredients
Chicken thigh (skin off/bone outCurry PowderCayenne Pepper powderOnion RawPotato RawNoSalt Salt Substitute (or a brand of your own choosing)
Directions
Remove skin from chicken thighs and remove the bone. Toss in just enough water to cover with either 1 tsp garlic powder or 3 cloves of fresh garlic and curry powder and cayenne pepper powder. Bring chicken to boil and cook for about 30 minutes. Meanwhile slice carrots and cut potatoes in quarters and half the quarters. Once chicken has cooked for 30 minutes add carrots and potato, cook for an additional 30 minutes or until vegetables are tender. Serve over one cup of curry rice or plain whole grain brown rice for a taste sensation!
