Eggplant Salad with Mayo

Ingredients
* Eggplant, fresh, 3 eggplant * Onions, raw, 1 large * Salt, 1 tsp * Pepper, black, 1 tbsp * Mayonnaise, regular (mayo), 2 tbsp
Directions
Bake eggplant on a metal plate put directly on the stove; turn on sides from time to time until eggplant is soft when pressed. Pierce each eggplant and let it rest, cool and drain in a sieve.

Peel the eggplants, then place them in a food processor with the rest of the ingredients and mash until creamy. Enjoy!
