Roasted Red Pepper & Artichoke Tapenade

Ingredients
1 7 oz. jar Roasted Red Pepper, chopped1 6 oz jar Artichokes in vinegar, chopped2-4 cloves fresh garlic, minced1/3 c fresh parsley choppedjuice of 1/2 lemon (fresh!)1/3 cup freshly grated parmesan cheese4 oz capers2-4 oz olive oil
Directions
Combine all ingredients and refrigerate until needed. Doubles easily. Make a few hours in advance or the night before to allow ingredients to marinate. No need for salt, pepper or anything! Great with whole wheat crackers, and probably over salmon or something. It is my go anywhere dip; everyone loves it!
