Wild Mushroom Ragout w/Polenta

Ingredients
5 cups wild mushrooms - boletes, bleeding milkcaps, morels, etc., thoroughly cleaned and chopped4 tbsp olive oil3 cloves garles, minced2 cups of dry polenta1 tsp basil1 tsp salt6 cups of water
Directions
Bring water to boil in heavy pot. Add butter, basil, salt and polenta. Lower heat to med and stir continuously for 10-15minutes. Polenta will thicken. Lower heat to lowest setting and continue to cook for 5 more minutes, add asiago or mozzarella to polenta and place into bowl.

Saute chopped mushrooms with olive oil and garlic. 5 - 8 minutes. Add chili flakes for additional zest (optional).
Serve mushrooms over polenta. Yumm!
