Fresh Tomato Salsa for a large group

Ingredients
1 large purple onion, finely chopped6 - 8 large tomatoes, seeded and chopped3 Tbs. minced garlic3 Tbs. seeded and chopped red chili peppers3 Tbs. seeded and chopped jalapeno peppers1 tsp. ground cumin2 tsp dry cilantro1 tsp lime or lemon juice1 Tbs cidar vinegar (5% acidity)1/4 tsp salt1/2 tsp ground black pepper1 tsp sugar
Directions
Makes 16 1/2 cup servings (2 quarts)
Combine all ingredients and pack in quart jars. Refrigerate overnight prior to use. (This must be kept in the refrigerator until used. It will last up to 2 weeks)
