Eggplant Parmesan

1 Tbsp grated parmesan cheese1 tspn Italian herb dressing1/4 tspn salt1/4 tspn pepper1 medium eggplant, cut into 1/2 inch slices1 Tbspn olive oil1/2 c pasta sauce2 Tbspns shredded part skim mozzarella chees
Combine the parmesan cheese, Italian herb seasoning, salt, pepper in a small bowl. Brush the eggplant slices with oil and sprinkle the herb mixture on both side of the slices.
Place the eggplant into a baking dish and cover with pasta sauce and mozzarella cheese.
Bake in 350 deg oven for approx 30 minutes.
