Apple Pie for Breakfast

Ingredients
CRUST1 1/4 cups Power Flour (or any whole grain flour)1/2 cup unsalted butter1 egg yolk1/3 cup milkFILLING6 cups thinly sliced, peeled apple1/2 cup sucanat1/4 tsp stevia1 tsp Saigon cinnamon1/4 tsp nutmeg
Directions
Cut butter into the flour with pastry blender. Add egg yolk and milk. Form into two balls; cover in saran wrap and refridgerate for about 30 minutes.
Preheat oven to 350 degrees. In a large bowl combine the filling ingredients.
Roll out bottom crust and place in pie dish. (Or do what I do and just press it in). Put apple filling in pan. Top with remainder of rolled out dough to form a top crust.
Bake for 50 minutes.
