Doreen's Spinach & Feta Crustless Quiche

Ingredients
6 eggs1/2 c. fresh or frozen spinach1/2 c. tomatoes diced4 scallions chopped3 oz. feta cheese crumbled
Directions
Preheat oven to 350. Separate 4 eggs and add to 2 whole eggs in a bowl. Chop scallions and add to mixture, chop tomatoes and add in mixture. Rough chop the spinach and add to mixture, crumble feta cheese into egg mixture. Add salt & pepper to taste. Pour into pie plate that has been sprayed with cooking spray. Bake in oven for 30-35 minutes or until knife comes out clean.
