200 grams light tofu (about 1/3 of a package)1 cup chopped swiss chardchopped fresh ginger1/2 cup chopped leeks (white & light green parts only)2 cloves garlic, minced1 tsp sesame oil1/4 cup parsley2/3 cup wild rice (cooked)1/2 cup black beans, rinsed well1/4 cup sun dried tomatoes, chopped
Steam-saute tofu with leeks, garlic and ginger, then add greens & saute until greens are tender, then stir in sesame oil.
Meanwhile, combine wild rice, black beans, sun dried tomatoes and parsley, season with lemon juice and zest, plenty of pepper.
Serve together.
