Chicken and Chilies Casserole (Freeze Ahead)

1/2 cup sour cream4 oz. cream cheese2 tbsp dry onion flakes2 tsp garlic powder1 tbsp cumin1/2-1 can Rotel (diced tomatoes and chilies) OR 1 4 oz can diced chilies1 teaspoon salt1/2 teaspoon pepper1/2 (2 pound) package frozen southern style hash brown potatoes12-1/2 oz canned cooked chicken1 cup shredded Cheddar cheese, divided6 oz tortilla chips, crushed
In a large bowl, combine sour cream, cream cheese, onion flakes, garlic powder, cumin, Rotel, salt and pepper. Stir in potatoes, chicken and 1/2 of the cheese.
Place in 2 loaf pans. Cover with foil and freeze.
To serve: Thaw and top with 1/2 cup cheese. Bake, uncovered, at 375 degrees for 45 minutes or until golden brown. Double cook time of frozen.
Makes 8 servings each with 3/4 oz tortilla chips.
