Karen's Crustless Zucchini Quiche

Ingredients
4 cups Small Zucchini, thinly sliced1 cup Onions, chopped2 Tablespoons Olive Oil2 Tablespoons Butter2 large Eggs, beaten1/2 cup Shredded Colby Jack Cheese1/4 cup All Purpose Flour3/4 teaspoon Salt1/4 teaspoon Ground Black Pepper1/2 teaspoon Garlic Powder1 teaspoon Italian Seasoning1 teaspoon Dried Basil
Directions
1. Preheat oven to 375.
2. In a skillet melt the butter with the olive oil.
3. Add zucchini and onion to skillet, saute till tender, set aside.
4. In a bowl blend eggs, spices, flour, and cheese.
5. Toss sauteed vegetables into egg mixture.
6. Spray a 10 inch pie plate with cooking spray.
7. Place mixture in pie plate.
8. Bake for 18 - 20 minutes, or till knife inserted in center comes out clean.
9. Let stand 10 minutes before serving.
