Meatballs & Mushroom Gravy w/Rice

Ingredients
2 lbs lean ground beef 1 egg (opt.)1 small onion, chopped (opt.)Spices to taste (omit salt)2 cans Cream of Mushroom Soup1 can sliced Mushrooms3 cups Long grain Rice (uncooked)
Directions
Mix lean hamburger, chopped onions, egg and spices(omit salt as soup and canned mushrooms hold enough) together and using a 2" scoop, prepare the mixture into meatballs. Drop the meatballs into a heated frying pan. I add 1/4 cup of water instead of oil to sear the meatballs - turning over once.
Remove the browned meatballs and place into your favourite serving casserole.
While frying pan is still warm add 1 can sliced mushrooms, drained. Once seared, stir in 2 tins of Cream of Mushroom soup - this also collects the browned ingredients to darken the gravy. If you need to add a little water, do so sparingly. Pour over meatballs. Cover if you'd like. I've done it both ways.
Place in a heated 350 Foven for 30-45 minutes.
Before your scheduled Lunch/Dinner - prepare the rice according to package cooking instructions.
Makes 10 servings.
Add a spinach Salad or Mixed Vegetables for colour. Enjoy.
