One 15 ounce can of cannelloni beans (drained and rinsed)two red bell peppers dicedone yellow bell pepper dicedone orange bell pepper dicedtwo shallots sliced thina small bunch of cilantro - just the tops, snipped into the potOlive oil to sautee the whole thing, approximately 4 tablespoonssome salt to taste
Makes 8 half cup servings.
put the oil in a pot, sautee the shallot, peppers and garlic until they are done to your liking. sprinkle the salt into the mixture to taste, add the cilantro and mix well. Toss in the beans and gently toss together until the beans are warmed through.
Serve on corn tortillas as a vegan taco.
